Partway through the maturation it loses its veil of flor and begins oxidative ageing as an oloroso sherry would. This combined maturation results in a wine with some of the richness of oloroso and some of the freshness of amontillado. It is a rare beverage though as just 1 to 2% of the grapes pressed for sherry
